MINT BARS 
FIRST LAYER:

Mix a family-size brownie mix (I use Betty Crocker) according to package directions. (I use "cake like" variation). Bake in an 11 x 17 (jelly roll) pan for 12 to 15 minutes (use oven temperature on box directions). Do not overbake. Cool.

SECOND LAYER:

3 c. powdered sugar
3/4 c. butter
2 to 3 tsp. milk
3 tsp. peppermint extract
Green food coloring

Mix and spread on brownie layer. Refrigerate.

THIRD LAYER:

1/2 c. butter
12 oz. chocolate chips (real)

Melt over hot water. Spread on green layer and refrigerate. Cut when cool. Makes approximately 5 dozen. These freeze well.
