MOLDED SPINACH SALAD | |
1 (3 oz.) lemon gelatin 1 c. boiling water 1/2 c. mayonnaise 2 tbsp. lemon juice 1/2 tsp. salt 1 c. chopped fresh spinach 1/2 c. chopped celery 2 scant tbsp. chopped onion 1 c. sm. curd cottage cheese Dissolve gelatin in boiling water. Add lemon juice, salt, and mayonnaise. Chill. Fold in vegetables and cottage cheese. Pour into oiled (greased) mold. Refrigerate until firm. Serve on a bed of spinach leaves. |
