MINI CHEESECAKES 
24 vanilla wafers
2 pkgs. (8 oz.) cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling (any flavor)
1/2 c. sliced nuts

Line muffin pans with liners. Place vanilla wafer on bottom.

In small bowl beat cream cheese, sugar and eggs, lemon juice and vanilla until light and fluffy. Fill pans 2/3 full of mixture. Bake in preheated 375 degree oven for 15 to 20 minutes until set. Top each with spoonful of filling and 1 teaspoon nuts. Chill.
