ZUCCHINI PARMESAN 
4 c. zucchini, sliced
2 eggs, beaten
1 c. mayonnaise
1 onion, chopped
1/4 c. chopped green pepper
1 c. freshly grated Parmesan cheese
Salt & pepper to taste
1 tsp. butter, melted
2 tbsp. bread crumbs

Place sliced zucchini in a 2 quart glass casserole in the microwave for 5 minutes. Drain thoroughly, put in a large bowl and stir in mayonnaise, onion, grated cheese, salt and pepper. Add zucchini to casserole dish. Combine melted butter and bread crumbs and sprinkle on casserole. Cook 5 minutes or until bubbly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
