ZUCCHINI NUT BREAD | |
3 eggs 1 c. vegetable oil 2 c. sugar 3 tsp. vanilla 3 c. all-purpose flour 1 tsp. baking soda 3 tsp. cinnamon 1 tsp. salt 1/2 tsp. baking powder 1/2 c. chopped nuts 1/2 c. coconut 3/4 c. raisins 2 c. finely grated zucchini 1 (8 oz.) crushed pineapple Mix together eggs, vegetable oil, sugar, and vanilla in large bowl. Sift together the flour, baking soda, cinnamon, salt and baking powder; add to the above mixture. Add nuts, coconut, raisins and zucchini. Grease and flour two 5x8-inch loaf pans. Pour mixture into pans and bake at 350 degrees for 1 hour. Remove immediately from pans. Yield: 2 loaves. |
