LORENE FRANCEN'S ZUCCHINI NUT
BREAD
 
3 eggs
2 c. sugar
1 c. salad oil
1 tbsp. vanilla
2 c. flour (plain), sifted
1 c. quick oats
1 tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
2 c. grated raw zucchini
1 c. chopped nuts

Beat eggs and sugar. Add oil and vanilla. Mix in flour, oats, cinnamon, soda, salt, and baking powder. Add zucchini and nuts. Mix well. Pour into 2 greased and floured 4 x 8 inch loaf pans. Bake 45-60 minutes at 350 degrees.
