ZUCCHINI NUT BREAD 
3 eggs
1 c. oil
2 c. sugar
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1 tsp. salt
2 c. grated zucchini
1 tsp. vanilla
1/2 c. chopped nuts

Beat eggs until foamy and add oil, sugar, zucchini and vanilla. Mix lightly but well. Add dry ingredients. Stir in nuts.

Pour into greased loaf pans, a little over half full. Bake at 350 degrees for 45 minutes or longer. Cool 15 minutes. Remove from pans. Let stand overnight. Freezes well.
