ZUCCHINI NUT BREAD | |
3 eggs 1 c. oil 2 c. sugar 3 c. zucchini, peeled & grated 3 tsp. vanilla 3 c. plain flour 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 3 tsp. cinnamon 1/2 c. chopped pecans 1/2 c. raisins Beat eggs with a whisk. Add oil, sugar and zucchini. Mix lightly. Add vanilla. Sift dry ingredients. Add to zucchini mixture, mixing well. Add pecans and raisins. Pour into 3 greased and floured 1 pound coffee cans. Bake at 350 degrees for 1 hour. Makes 3 loaves. |
