PINEAPPLE CAKE 
2 c. whole wheat pastry flour
1 c. sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
1 (20 oz.) can crushed pineapple, undrained
1 egg
3 tbsp. wheat germ

In a large bowl, combine flour, sugar, baking soda, baking powder, and spices. Stir in pineapple and egg. Mix well. Pour batter into 9 x 13 inch pan. Sprinkle evenly with wheat germ and additional cinnamon. bake about 45 minutes at 350 degrees until a knife inserted in center comes out clean.
