PINEAPPLE CARROT RAISIN MUFFIN 
1/2 c. white sugar
1/2 c. dark brown sugar
1 1/4 c. all-purpose flour
1 c. wheat flour
1 tbsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1/2 c. raisins
1 1/2 c. grated carrots
1 (8 oz.) can crushed pineapple (drained)
3 egg whites
1 tsp. vanilla
1/2 c. oil
1/2 c. water or pineapple juice

Sift sugar, flour, cinnamon, baking soda and salt. Add fruits, carrots.

Mix eggs, oil, water and vanilla. Pour into dry ingredients. Bake 350, 35 minutes.
