PINEAPPLE, CARROT, RAISIN
MUFFINS
 
2 eggs
1/2 c. butter
1 tsp. vanilla
1 (8 oz.) can crushed pineapple
1/2 c. raisins
1/2 c. shredded carrots
2 c. flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. ginger

Mix first 6 ingredients, then mix dry ingredients only until just moist. Bake at 350 degrees for 20 to 25 minutes.

Makes 1 dozen.
