MANICOTTA 
CREPES:

3 eggs, beaten
Pinch salt
Pinch baking powder
1 c. flour
1 c. water

FILLING:

1 - 1 1/2 lbs. ricotta cheese
Salt & pepper (pinch each)
1/2 c. grated cheese
1/2 c. cubed Mozzarella cheese

CREPES: Mix all together, no lumps. Melt 1 teaspoon butter in small frying pan. Add 2 tablespoons batter, spread thin. Cook until dry on one side. Turn, cook other side. Do not brown. Repeat until all crepe batter is used.

FILLING: Mix all ingredients. Put filling in middle of crepes and fold sides in.

Put in baking dish; cover with tomato sauce. Bake 1/2 hour at 350 degrees. Makes 15 manicotta.
