SWEET POTATO SOUFFLE 
4 lg. sweet potatoes
1 egg
1 c. sugar
1 pt. sour cream
1/2 c. butter
1/2 tsp. cinnamon
5 tsp. self-rising flour
1 box vanilla wafers
1 sm. bag miniature marshmallows

Peel, cut and boil potatoes until tender. Mash potatoes; add egg, sugar, sour cream, butter, cinnamon and flour to potatoes. Mix well. Line large casserole dish with vanilla wafers.

Pour potatoes over vanilla wafers. Spread marshmallows over top of potatoes. Bake at 325 degrees until marshmallows are melted and brown.
