SWEET POTATO CASSEROLE 
4 med. yams (2 lbs.)
1/4 c. half & half
2 tbsp. butter
1 c. sour cream, divided 1/2 & 1/2
1 egg
2 tbsp. brown sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
Dash of pepper
2 tbsp. chopped walnuts

Mix all together, except nuts and 1/2 sour cream. Blend in food processor or blender until smooth. Put into 1 quart casserole dish; cover with waxed paper. Microwave cook on high 1 1/2 minutes, then on medium 6-8 minutes. Spread remaining sour cream on top; sprinkle with nuts. Microwave cook on medium 2-4 minutes. Serve warm.

Since microwave ovens vary in power, you may need to adjust your cooking time.
