CURRIED CHICKEN SALAD 
3 c. chicken, cubed (from a 3 lb. chicken, cooked & deboned)
2 c. brown rice, cooked
1/3 c. onion, minced
1/3 c. celery, chopped
1/3 c. green pepper, chopped

DRESSING:

1 c. light mayonnaise
2 (rounded) tsp. curry powder
2 tbsp. vinegar
Pepper to taste

Twenty four hours ahead, combine all ingredients. When ready to serve, adjust seasonings to taste. Serve with fresh fruit salad which includes pineapple chunks. Also, serve with a favorite vegetable salad. Serve with whole wheat crackers. A nice "Ladies Lunch" that can all be made ahead.
