CARROT CAKE AND ICING 
1 1/2 c. sugar
1 c. oil (Crisco)
4 eggs
3 c. grated carrots
2 c. Wondra flour
2 tsp. cinnamon
2 tsp. baking soda

Cream sugar, oil, and eggs. Sift dry ingredients together and add to cream mixture. Add carrots last. Line pan with brown paper bag, including sides of pan. Do not grease. Bake at 350 degrees for 30 minutes. Size of pan will vary baking time.

ICING:

1 lb. confectioners' sugar
2 oz. cream cheese (Philadelphia)
2 tsp. vanilla
1/2 stick butter
1 c. nuts (optional)

Mix together, adding enough milk or water to spread. Ice cake.
