CARROT CAKE AND ICING 
2 c. sugar
1 1/2 c. cooking oil
4 unbeaten eggs
2 c. sifted flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 c. grated carrots
1 c. chopped walnuts

Mix oil, eggs and sugar together. Sift flour, soda, cinnamon and salt. Add carrots and nuts. Mix with first mix. Pour into a greased and floured 9 x 13 pan. Bake at 350 degrees for 1 hour.

CREAM CHEESE ICING:

1 box powdered sugar
1 stick butter
8 oz. cream cheese
1 tsp. vanilla

Cream together. Mix with mixer until smooth. Ice cake after cake cools.
