FRENCH VEGETABLES 
3 tsp. olive oil
2 lg. yellow onions, sliced
4 sm. green peppers
8 plum tomatoes
1 tsp. salt and ground pepper
Mushrooms
1 tbsp. tomato paste
1 clove garlic
1 tbsp. fresh diced parsley
1/4 tsp. dry oregano

In large heavy pot, place oil and onion. Cook slowly on low for 1/2 hour. Add peppers and mushroom paste. Cook 25 minutes more. Add fresh spices. Cook 5 more minutes. Serve over rice.
