ZUCCHINI CRISP 
4 c. flour
3 c. sugar
1/2 tsp. salt
1 1/2 c. butter
8 c. chopped zucchini
2/3 c. lemon juice
1/4 tsp. nutmeg
1 1/2 tsp. cinnamon

Mix flour, 2 cups sugar and salt in bowl. Cut in butter until crumbly. Press 1/2 mixture over bottom of greased baking dish and bake 375 for 10 minutes.

Mix zucchini with lemon juice and cook until tender. Add remaining 1 cup of sugar, nutmeg and cinnamon. Simmer one minute stirring constantly. Cool (I didn't) and pour into baking dish over crust.

Sprinkle crumb mixture that remains and bake 35 minutes more at 375 degrees. It's crunchy, flat, delicious and no one can guess it's zucchini.
