QUICK ZUCCHINI CRISP 
5 c. peeled & sliced (seeds removed) zucchini
1/3 c. granulated sugar
1 tsp. cinnamon
1/4 c. lemon juice
3/4 c. water

TOPPING:

1 c. flour
1/2 tsp. salt
1/2 c. brown sugar
1 tsp. baking powder
1/3 c. butter

Combine zucchini, sugar, cinnamon, lemon juice and water. Bring to a boil, reduce heat and simmer 10 minutes. Pour into greased 7"x11" pan or dish. In a small bowl, mix flour, salt, brown sugar and butter until crumbly. Sprinkle over top. Bake at 350 degrees for 45 minutes. Serve warm or cool and with whipped topping or whipped cream, if desired. Makes about 6 servings.
