BROILED SALMON 
4 salmon steaks
1/4 lb. butter
1 tbsp. fresh parsley, chopped
1 tbsp. fresh chives, chopped
Juice from 1 lemon
Salt
Pepper

Salmon steaks should be cut 3/4 inch to 1 inch thick. Brush 1/4 tablespoon butter over each of the steaks. Melt the remaining butter and mix with the herbs, lemon juice, salt and pepper. Place salmon on a wire cooking rack and broil over a charcoal grill. Turn often and baste each time with butter mixture. On a hot fire, cook about 5 minutes total on each side. In a stove broiler, salmon should be cooked basically the same way. Serve with garnish of parsley and chives and lemon wedges.
