PINEAPPLE PORK | |
1 (20 oz.) pineapple chunks 1 tbsp. oil 1/4 c. brown sugar, packed 1/2 tsp. salt 1/3 c. vinegar 1 tbsp. soy sauce Hot cooked rice 1 1/2 lb. boneless pork 1 med. onion, chopped 2 tbsp. cornstarch 1/2 c. water 2 tbsp. catsup 1 lg. green pepper Drain pineapple, reserve juice. Cut pork into 1 inch cubes, cook in hot oil until browned. Drain. Add onion, cook until tender. Combine sugar, cornstarch and salt in a small bowl. Gradually add water, stirring until smooth. Stir in pineapple juice, vinegar, catsup and soy sauce. Add to pork, stirring constantly, cook over medium heat until sauce thickens. Cover, reduce heat and simmer 45 minutes or until meat is tender. Stir in the pineapple and green pepper chunks. Cover and cook 3 minutes. Serve with rice. |
