PINEAPPLE PORK 
1 (20 oz.) can pineapple chunks
1 tbsp. vegetable oil
1 1/2 lbs. boneless pork, cut into 1-inch cubes
1 med. onion, chopped
1/4 c. packed brown sugar
2 tbsp. cornstarch
1/2 tsp. salt
1/2 c. water
3 tbsp. vinegar
2 tbsp. catsup
1 tbsp. soy sauce
1 green pepper, cut into 1-inch pieces
Hot cooked rice

Recipe can be doubled and tripled.

Drain pineapple. Save juice. Heat oil in a large skillet. Add pork and cook until tightly browned. Add onion, and cook until tender. Combine sugar, cornstarch and salt in a small bowl. Add water, stirring until smooth. Stir in pineapple juice, vinegar, catsup, and soy sauce. Add mixture to pork, stirring constantly; cook until thickened. Cover and simmer 1 hour. Stir in pineapple and green pepper; cover and cook 3 minutes. Serve with rice. Yields: 4 to 6 servings.
