PINEAPPLE CHICKEN 
1 chicken, cubed
Salt
Pepper
3 tbsp. soy sauce
3 c. water

SAUCE:

2 tsp. ginger, finely chopped
2 tbsp. vinegar
1 tbsp. cornstarch
1 tbsp. soy sauce
1 can pineapple chunks
2 tbsp. sugar

Cut chicken in small pieces and put in baking pan. Add salt, pepper, soy sauce and water to chicken. Bake for 1 hour at 350 degrees. Serves 4.

Sauce: Melt sugar in a pan (caramelize until light brown). Add juice from pineapple with water to caramelize sugar. Add chopped ginger, vinegar, soy sauce, salt and pepper. Let boil for a few minutes. Thicken with cornstarch. Add chunks of pineapple.

To serve: Remove chicken from oven and put on serving dish. Spoon sauce over chicken.
