PINEAPPLE CHICKEN 
1 frying chicken
1 (13 1/2 oz.) can chunk pineapple
1 c. sugar
2 tbsp. cornstarch
3/4 c. cider vinegar
1 tbsp. soy sauce
1/4 tsp. ginger

Roll chicken in flour and brown. Add water to pineapple juice to make 1 1/2 cups. Add above ingredients to juice, except for pineapple chunks. Bring to boil for 2 minutes. Put chicken in baking pan (13 x 9 inch); pour sauce over. Bake, uncovered, for 30 minutes. Cover and steam for another 30 minutes. Add pineapple chunks before 30 minutes. Bake at 350 degrees.
