SWEET AND SOUR TURKEY 
2 tbsp. water
1 sm. onion, thinly sliced
1/4 c. chopped green pepper
1 lg. celery stalk, sliced
2 c. cooked, cubed turkey
15 1/2 oz. can pineapple chunks
4 tsp. cornstarch
1 tsp. instant chicken bouillon granules
1/4 tsp. salt substitute
1 tsp. brown sugar
1 1/2 tbsp. soy sauce
1 tbsp. vinegar

Place first 6 ingredients in a 2 quart casserole and set aside. In 4 cup measure, combine cornstarch, bouillon, ginger, salt and brown sugar. Stir in soy sauce, vinegar, and pineapple juice. Microwave at high for 2 to 3 minutes or until sauce is clear and thickened, stirring every minute. Fold sauce into turkey mixture; cover. Microwave at high for 4 to 6 minutes or until thoroughly heated. Serves 4 at only 210 calories per serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
