STEAK AND KIDNEY PIE | |
2 c. flour 1/2 tsp. salt Ice water 1/2 lb. butter 2 lb. round steak, cut into cubes 2 - 3 lamb kidneys Start pastry early in the morning. Mix flour and salt with enough ice water to make a ball. Turn onto the counter and leave under the bowl for 15 minutes. Roll out into rectangle and slice butter onto half of it. Fold over and roll gently; butter must not leak out. Fold into thirds and then in half. Roll in damp towel and refrigerate. Repeat this process every half to 3/4 hour until it has been rolled 4 times. Meanwhile brown steak cubes and lamb kidneys in fat. ( Take vein out of kidneys and slice them.) Cook for about an hour, then turn into a casserole. Top with pastry and bake about 45 minutes at 425 degrees until pastry rises and is golden brown. |
