PINEAPPLE FRITTERS 
2 c. plain flour
1 c. milk
2 tsp. baking powder
1 egg
1 tsp. salt
1 tbsp. sugar
1 sm. can crushed pineapple, drained, reserve juice

You can substitute self-rising flour for plain by leaving out the baking powder and salt.

Mix together all of the above ingredients and drop by the tablespoons into hot Wesson oil and deep fry until golden brown. You may have to help them turn over to brown both sides equally. When they are all cooked, set aside.

SYRUP:

Juice from pineapple
1 c. sugar
1 tbsp. butter
A little flour

Melt butter in a saucepan and stir in flour. When mixed well, add the sugar and juice. Cook to desired thickness.
