AUTHENTIC ALBONDIGA SOUP | |
1.5 pounds of hamburger 1 tbsp. fresh finely chopped or ground dried mint leaves 1 tbsp. thyme 1 tbsp. marjoram 1 tbsp. parsley 2 tsp. salt 1 tsp. ground cumin 4 cups water 2 cups chicken broth 1 egg 1 cup uncooked rice (halved) 1 small onion, chopped 1 large tomato, diced i small yellow squash a pinch saffron Sauté onion and tomato, squash and saffron in olive oil until tender and set aside. Mix hamburger, mint, thyme, marjoram, parsley, salt, egg, cumin and half cup of the rice. Mix well and form into balls (ping pong sized). Bring water and broth to boil and add meatballs and additional half cup of uncooked rice lower heat to medium cook until rice in soup and rice in meatballs looks fluffed and tender about 20-25 minutes. Season broth to taste with additional salt if desired. Add sauteed veggie mix and cook an additional 5 minutes on low. Serve in bowls and for extra kick a couple of drops of chipotle hot sauce (eg Tabasco's brand chipotle sauce). *chipotle sauce is optional. Submitted by: jo |
