WHITE FISH SAUTE 
1 1/2 lbs. fish (halibut, cod)
1 c. flour
3 eggs, beaten
4-5 tbsp. butter
2-3 tbsp. oil
2 c. sliced mushrooms
1/4 c. sliced onion

Slice fish on diagonal, into large chunks. Dredge in flour, then place in eggs and soak 2 to 3 minutes. In large heavy skillet, melt 2 tablespoons each of butter and oil over medium heat. Add fish, and cook on both sides. Place in 400 degree oven. Add extra butter and oil, if needed. Saute mushrooms and onions. Add a sprinkle of lemon juice. Remove fish from oven and pour this over fish; serve.
