WHITE FISH WITH FERMENTED BLACK
SOYBEANS
 
1 lb. white fish or milkfish
1/2 tsp. salt
1/4 c. cooking oil for frying fish
3 tbsp. butter
3 cloves garlic, finely chopped
1 onion, sliced
1 c. soybean cheese (tofu)
1 c. water
1/2 c. fermented black soybeans
2 tbsp. white vinegar
1 tbsp. sugar

Cut soybean cheese into small pieces. Clean fish; cut into crosswise pieces about 1-inch thick. Salt and let stand 15 minutes. Fry in cooking oil until brown; set aside.

Heat butter in a saucepan. Saute garlic, onion, ginger, and soybean cheese. Add water, then stir in fermented black soybeans, vinegar, and sugar. Cover and boil for 5 minutes. Do not stir. Drop in fish and continue cooking 10 minutes more. Serve hot.
