TABOOLEY (Syrian) 
1 c. cracked wheat, fine grain
1 bunch green onions
2 lg. bunches parsley
2/3 c. fresh mint leaves (or 1/2 c. dried mint)
Juice of 4 lemons
1/4 c. olive oil
1 tsp. salt
1/2 tsp. pepper
Tomatoes

Rinse wheat in water until no longer cloudy (2 to 3 times). Soak for 10 minutes. Squeeze dry by cupping hands and pressing between palms of hands. Use cutting board to finely chop fresh parsley. Chop onions, mint leaves and tomatoes very fine. Place vegetables in large bowl, add wheat, lemon juice, oil, salt and pepper, and mix well. Serve with lettuce leaves. Serves about 6.
