THUBULIE (Syrian Salad) 
1 c. cracked wheat
1 bunch parsley
1 bunch scallions
1 cucumber
1 tomato
Dried mint
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. oil
4 lemons

Soak wheat in warm water. Chop parsley, scallions, cucumber and tomato. Put in bowl. Drain water from wheat and spread over vegetables. Squeeze juice from lemons and pour over vegetables and salt and pepper and oil and mint. Stir well.
