OKRA PILAF 
4 slices bacon
1 1/2 c. boiling water
2 c. sliced okra
2 c. chopped tomatoes
1 c. uncooked rice
Salt & pepper
1/4 tsp. basil, optional

Saute bacon in skillet until crisp and set aside. To the bacon drippings add the boiling water. Add okra and tomatoes and let come to a brisk boil. Add rice, salt, pepper and basil. Cover and cook over low heat about 30 minutes or until rice is fluffy. Add more water during cooking, if needed. Place in serving dish and crumble bacon on top. Serves 4-6.
