HOT AND HEARTY POTATO SALAD | |
1 c. chopped onions 1/3 c. cider vinegar 4 med. potatoes, cooked, peeled, sliced (about 4 c.) 1 tbsp. butter 1 tbsp. sugar 1 tbsp. chopped parsley 1/2 c. mayonnaise 1/4 tsp. pepper 2 strips bacon, cooked, drained, crumbled In large skillet over medium heat, cook onions in butter for 2 to 3 minutes. Stir in mayonnaise, vinegar, sugar and pepper. Add potatoes, continue cooking, stirring constantly about 2 minutes or until heated through (do not boil). Garnish with parsley and bacon. Serves 4-6. |
