FRUIT NUT STUFFING 
2 tbsp. butter
1 c. orange juice
1 c. water
1 med. onion, chopped
4 med. apples, cored & chopped (leave skins on for added fiber)
1 c. raisins
8-10 slices bread
1/2 c. chopped walnuts
1 1/2 tbsp. poultry seasoning

Put water, orange juice, onion and butter in saucepan. Bring to boil, stirring until butter is melted. Put fruit, nuts, bread cubes and seasoning in large, oven-proof bowl. Add liquid, mixing thoroughly. Cover with foil and bake at 350 degrees for 30 minutes.

Serving size 1/2 cup: 123 calories per serving and 2 grams fat per serving.

Most packaged stuffing mixes call for 8 times the butter used in this recipe. This is very low in fat and sodium, but the flavor is excellent! Add more liquid (water and/or juice) to keep the stuffing moist. Bake the stuffing separately from meats and poultry as it soaks up fat from the meat.
