PURE FRUIT COOKIES 
3 ripe bananas (about 1 1/2 c.)
1/2 c. peanut or safflower oil
1 tsp. vanilla
1/8 tsp. salt
1 1/2 c. rolled oats
1/2 c. uncooked oat bran
1 1/2 c. coarsely chopped mixed dried fruit such as raisins, dates, apricots
1/2 c. chopped walnuts or almonds or pecans
1/2 c. unsweetened coconut (if wanted)

Preheat oven to 350 degrees. Grease two large cookie sheets with solid shortening, butter or cooking spray.

Place mashed bananas in large bowl. Stir in oil, vanilla and salt. Add oats, oat bran, mixed fruit and nuts and stir well.

Drop by rounded tablespoonfuls onto prepared cookie sheets about one inch apart. Flatten out slightly with back of spoon. Bake in preheated oven 20 to 25 minutes or until bottom and edges of cookies are lightly browned. Transfer cookies to wire rack to cool completely. Store in refrigerator. These cookies are sugar-free. Good for diabetic diets.
