PENNE & ARTICHOKE HEARTS 
1/4 c. olive oil
2 cloves garlic, chopped
2 cans of artichoke hearts, quartered
Sprinkle of pepper flakes
Pinch of basil
Salt & pepper to taste
1 1/2 lbs. penne pasta (quil shaped)

Saute garlic in oil. Drain artichokes, reserve liquid. Saute artichokes in garlic and oil for about 5 minutes. While sauteing, add red pepper, basil, salt and pepper.

Add about 1/3 of reserved juice from artichokes, cover. Simmer for another 5 to 7 minutes. Boil water in large pot, cook pasta. Drain pasta. Pour sauce on pasta. Serve with cheese (Locatelli or Parmesan). P. S. Don't forget the white wine. Salute!
