ARTICHOKE HEART APPETIZER 
2 cans heart of artichokes
1 c. bread crumbs
1 lg. pkg. grated Cheddar cheese
1 lg. pkg. grated Mozzarella cheese
8 eggs, well beaten
Olive oil
2 cloves garlic
1/2 sm. onion, chopped
1/2 c. parsley, chopped

Drain artichokes, cut into quarters. Saute garlic, onions and parsley in olive oil. Mix all ingredients in large bowl. Pour into ungreased 14 x 12 inch pan. Bake at 350 degrees for 40 to 45 minutes. Cool, cut into squares. May be served warm, also tastes great cold!
