APPLE POUND CAKE | |
2 c. coconut 3 c. raw apples, chopped 1 c. nuts, chopped 1 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 2 tsp. vanilla 1 1/3 c. vegetables oil (I use Crisco oil) 2 c. sugar 3 c. flour, plain 3 eggs, beaten well Sift dry ingredients (flour, cinnamon, salt, and soda). Cream sugar and eggs until fluffy, add oil and vanilla, then add dry ingredients. Add apples while still using mixer. Add nuts and coconut and mix well. Bake approximately 1 1/2 hour at 325 degrees, in tube pan. GLAZE FOR APPLE CAKE: 1 c. brown sugar 1 stick butter 1/4 c. sweet milk Cook about 3-5 minutes and pour over cake just as it comes out of oven (still in pan). Most of it will soak in. Take this cake out of the pan as soon as it cools a few minutes after taking it out of the oven. |
