POPPYSEED CAKE 
2 1/2 oz. poppy seeds
1 c. milk
2 eggs
3/4 c. oil
1 1/2 c. brown sugar
1/2 tsp. vanilla
2 c. whole wheat flour
1/4 c. instant milk powder
Dash of cinnamon and/or nutmeg
2 1/2 tsp. baking powder

Soak poppy seeds and milk together for 1 hour. Add eggs, oil, brown sugar, and vanilla; beat together. Mix flour, milk powder, cinnamon and/or nutmeg, and baking powder separately. Add dry ingredients to wet. Mix. Bake in a greased and floured cake pan at 350 degrees for 45 minutes.
