FRUITED RICE 
1 lb. 8 oz. carrots, sliced
1 c. butter
1 lb. 5 oz. green onions, including tops, chopped
3 lbs. 3 oz. cooking apples, cored and sliced
6 lbs. 12 oz. cooked rice (cooked in chicken broth)
1 lb. 14 oz. seedless raisins, plumped
2 or more tbsp. salt
1 1/2 tsp. ground black pepper
1/3 c. sesame seed, toasted

Cook carrots in butter until tender crisp, about 5 minutes. Do not over cook. Add onions and apples. Cook 5 minutes longer. Stir in rice, raisins, salt, and pepper. Cook over low heat, stirring, until rice is thoroughly heated. Add sesame seed and toss lightly. 50 portions.
