1/2 c. crushed wheat (found in health food store) 8-10 scallions 2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. allspice or mixed spice 1/4 c. olive oil 5 c. very finely chopped parsley 1/4 c. finely chopped fresh mint or 2 tsp. dried mint 3 lg. tomatoes, finely chopped 1/4 c. lemon juice Wash the wheat and drain well by squeezing out excess water with cupped hands. Place in a bowl and refrigerate for at least 1 hour. Trim the scallions to leave about 8 inches of green. Finely chop the green of the scallions and place it with parsley, mint and tomatoes. Finely chop the white of the scallions and mix it with the crushed wheat. Add salt, pepper and allspice. Add this to the parsley mixture. Add the lemon juice and olive oil and toss well. Adjust salt and lemon juice to taste; set aside in the refrigerator or until ready to serve. |
