CREOLE SMOKIES 
1 lb. fresh okra
1/2 c. chopped onion
2 tbsp. shortening
1 (12 oz.) pkg. smoked sausage
1/2 tsp. salt
1 (10 oz.) can Rotel tomatoes
Cooked rice

Wash and slice okra. Fry okra and onions in hot fat until okra is no longer slimy, about 15 minutes. Cut sausage into 1/2 inch slices and add with salt and tomatoes. Cover and simmer 20 minutes. Serve over a bed of hot rice.
