GRANDMA O'S STUFFED CABBAGE | |
1 sm. head cabbage 1 lb. ground beef 2 med. onions, finely chopped 1 (15 oz.) can tomato sauce, divided 1/2 c. cooked rice Salt and pepper to taste 2 tbsp. brown sugar, packed Cut core from cabbage and scald, either in a large pot of boiling water or in the microwave on HIGH for 4 to 5 minutes. Remove ten leaves, and cut out hard center rib. Crumble ground beef into a medium bowl. Add onions, half the tomato sauce, rice, and seasonings; mix. To stuff cabbage, place beef-rice filling in cabbage leaf; roll up folding edges in. Arrange seam side down in a baking dish. Blend remaining tomato sauce with brown sugar and vinegar. Pour over rolls. Cover and cook in standard oven for about 1 hour or in the microwave on MEDIUM 28-30 minutes. Let stand covered for 5 minutes before serving. Yield 4 servings. |
