MUSHROOM QUICHE | |
1 frozen pie shell (9 inch), lightly baked and cooled 1/4 lb. Swiss cheese, grated 3 oz. Gruyere cheese, grated 1 onion, chopped & sauteed 1/4 lb. fresh mushrooms, sliced and sauteed 2 egg yolks 2 egg whites 1/2 c. evaporated milk 1/2 c. whole milk Dash Tabasco sauce (1/8 tsp.) Pinch salt (1/4 tsp.) Dash nutmeg (1/8 tsp.) 2 tbsp. flour Preheat oven to 350 degrees. Combine grated cheese and spread on the bottom of the pie shell. Add onion and mushrooms which have been sauteed. In a separate bowl, mix the eggs and the flour. Slowly add both milks and mix well. Add the Tabasco, salt and nutmeg. Pour mixture into the pie shell. Bake at 350 degrees for 45 minutes or until quiche is brown on top and custard is set. Serves 6 as an entree at 365 calories each serving; 10 appetizer servings at 219 calories each. |
