CHICKEN CASSEROLE 
2 1/2 c. cooked chicken, cubed (white meat)
2 c. hot cooked rice
1 c. onions, finely chopped
1 c. green peppers, finely chopped
1 small jar pimentos, sliced
1 tsp. garlic salt
1/4 tsp. pepper
1 (10 3/4 oz.) can condensed cream of mushroom soup
1/2 c. Hellmann's mayonnaise
1 tbsp. chopped parsley
1 c. grated Cheddar cheese
mushrooms (add more if you like)

Combine chicken, rice, onions, green peppers, pimentos, garlic salt, pepper, soup, mayonnaise and parsley. Toss lightly. Put in greased shallow 2-quart casserole. Sprinkle with cheese.

Bake at 350°F for 25 to 30 minutes, or until thoroughly heated.

Serves 6.
