SHREDDED BEET AND CUCUMBER SALAD | |
1 head Boston or leaf lettuce 4 med. cucumbers, sliced 4 c. coarsely shredded, peeled, raw beets 1/2 c. sliced onions Just before serving, line shallow bowl with lettuce, arrange cucumbers over lettuce. Mound beets in center, sprinkle with onions. Serve with dressing. DRESSING (MUSTARD VINAIGRETTE) : 3/4 c. vegetable oil 1/4 c. wine vinegar 1 tbsp. Dijon mustard 1/2 tsp. salt 1/2 tsp. pepper Shake well. |
