Maple Syrup Drop Cookies

I made a couple changes. First instead of 1 cup of maple syrup I used 1/2 cup maple syrup and 1/4 cup honey. Honey is more economical and they were still sweet enough with a maple flavour. Also I used canola oil in place of shortening. They only needed about 8-9 minutes to bake and I made 20 cookies.

Alright, guys -- I just wanted you to know that I made this recipe with a few substitutions so you know what'll happen if all you have is veggie oil (instead of shortening), self-rising flour (instead of every other dry ingredient), and low-calorie maple syrup. It's not a cookie. It's a biscuit, and possibly one of the best I've EVER HAD. Cooked for 10 mins at 400 and OMG... Also added a dollup of maple syrup in the middle-top of one and it's soooo yummy.

Puffed up, cakey, but moist... subtly sweet. Super easy to make...Sticky dough, but easy to make uniform sized cookies using teaspoon to drop. I found they were browned lightly (perfect) at 7 minutes at recipe's temperature of 400°F.

I thought these tasted like a "pancake cookie"... Not really sweet or fluffy. A little more dense. Definitely didn't satisfy my sweet tooth... :)
Put a hershey kiss on the top and that helped a little. My kids (1, 5 and 7) really liked them though.
