LAMB CURRY 
2 lbs. lamb, cut in cubes
3 tbsp. olive oil
1 chopped onion
1-2 tbsp. curry powder
1 c. chicken stock, can use bouillon cube
3 carrots, sliced
4 celery stalks, chopped
3 tbsp. chopped parsley
1 apple, peeled and cut in sm. pieces
1/2 c. raisins
1/4 c. chopped cucumber

Brown lambs in olive oil. Add onion and saute. Add curry powder. Then add chicken stock and rest of ingredients. Stir and simmer covered for about 1/2 hour. Makes 4-6 servings.
